Guacamole
A
popular Mexican dip, guacamole tastes great with tortilla chips, and makes a flavourful dipping sauce for tacos and
burritos. Feel free to turn the heat up or down on the recipe by increasing or
reducing the amount of Jalapenos as desired.
Ingredients
2 avocados
2 minced garlic cloves
1/2 medium tomato, chopped fine
1 green onion, white and green parts, chopped fine
2 sprigs finely chopped cilantro, or to taste
3 tablespoons freshly squeezed lemon juice
1 tablespoon Scarpone's Sliced Jalapenos (hot)
Salt and pepper, to taste
1 bag tortilla chips (Guiltless Gourmet Baked Yellow Corn Chips are good)
Peel the avocadoes, remove the pits, and mash. Add the remaining ingredients
and mix together. Mash a bit more for a smoother texture if desired.
Sprinkle a few drops of lemon juice over top to keep the guacamole from
darkening. Cover and refrigerate for 1 hour to give the flavours a chance to
blend. Serve with the tortilla chips.
Safety Tip: Make sure to wash the green onion thoroughly in hot water to
remove any dirt or bacteria before using.
